Shinichi Sasaki and his wife Kozue were among the first to open an oyster hut in Itoshima 25 years ago.
“Our family has always worked along the coast,” says Shinichi. “We used to farm sea bream until the price of feed became too high and it became unprofitable. Then we became oyster farmers, which is what we do today.”
Today, three generations of the Sasaki family work together at their oyster hut, Shineimaru, providing oysters to customers every day of the winter.
